In cool zones (3-6), arugula can be grown through most of the summer with only brief midsummer bolting risk. In hot zones (8-11), it bolts to flower within days once temperatures pass 75-80°F, so it is best treated as a spring and fall-through-winter crop there, with light afternoon shade extending the harvest window slightly in shoulder seasons.
